Goey Chocolate Cake
Looking for a dessert that looks impressive but is secretly the easiest thing you’ve ever made? Meet the Swedish “Kladdkaketårta”, a rich, sticky chocolate cake stacked into a dreamy layered torte with whipped chocolate cream and fresh berries. Think brownie meets layer cake—with none of the effort.
Picture this: two gooey cakes, a cloud of chocolate cream in the middle and on top, and a crown of fresh berries. That’s it. No fancy tools, no complex steps, no special ingredients.
You can even let the kids help, or skip the baking altogether and use store-bought cakes. But if you want to make it from scratch, here’s exactly how to do it.
You Might Need
Two 8-inch round cake pans
Parchment paper
Hand mixer or stand mixer
A serving plate
A big appetite
Ingredients (Serves 8)
For the Cakes (make two of these)
1 stick (½ cup) unsalted butter
2 eggs
1 cup granulated sugar
¾ cup all-purpose flour
1 teaspoon baking powder
5 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
Pinch of sea salt
For the Chocolate Cream
2 cups heavy whipping cream
3 tablespoons unsweetened cocoa powder
2 tablespoons powdered sugar
For Topping
About 4 cups of fresh berries—strawberries, raspberries, blueberries, your call
How to Make It
Preheat your oven to 350°F. You’re going to make two separate cakes using the same recipe, so either double it or repeat the steps twice.
Melt the butter and let it cool slightly.
In a large bowl, beat the eggs and sugar until pale and fluffy.
In a separate bowl, mix flour, baking powder, cocoa powder, vanilla, and a pinch of salt.
Gently fold the dry ingredients into the egg mixture, then stir in the melted butter until smooth.
Line your pans with parchment paper and pour the batter into each.
Bake for about 15 minutes. The center should still be soft—that’s what gives the cake its signature gooey texture.
Let the cakes cool completely before assembling.
While they cool, whip the cream with cocoa powder and powdered sugar until light and fluffy.
Place one cake on a serving plate, spread half the whipped chocolate cream over it, then stack the second cake on top. Cover the top with the rest of the cream and load it up with fresh berries.
This is the kind of dessert that turns a regular day into something worth celebrating. Save it, bake it, and enjoy every bite.
